Vegan Braised Greens


  • 1/4 cup extra virgin olive oil

  • 1/2 cup onion, finely chopped

  • 4 cloves garlic, minced

  • 3 cups vegetable broth

  • 8 cups kale, roughly chopped

  • 2 Tbsp raw apple cider vinegar

  • 2 Tbsp maple syrup

  • 1/2 tsp sea salt

  • 1/2 tsp ground black pepper


  1. Over low-medium heat, combine olive oil, onion, garlic, and half a cup of veggie broth in a saucepan. Stir continuously until onions are translucent.

  2. Add the rest of the broth, along with the remaining ingredients and bring to a quick boil. Then reduce to a simmer.

  3. Cook uncovered for 45 minutes. Use a slotted spoon to transfer the greens from the pan to your serving dish, and if desired, cover the greens with a spoonful or two of the remaining sauce from the pan.

  4. Serve hot and enjoy!
