1 pound potatoes or sweet potatoes
2 Tbsp olive oil
1 Tbsp fine sea salt
2 Tbsp freshly ground black pepper
2 medium gala apples
3 cups loosely packed braising greens, roughly chopped
fresh parsley, coarsely chopped for garnish
Preheat the oven to 400 degrees F. Chop potatoes and apples into about 1 inch cubes.
Toss the potatoes with olive oil on a baking sheet until coated; season with salt and pepper. Roast for about 15 minutes.
Remove from the oven and give the potatoes a stir. Add the apples and return to oven. Continue cooking until the potatoes are browned and tender and the apples are soft, about 10 minutes.
Stir in the greens and continue to roast until the greens are wilted, 2 to 4 minutes more. Adjust the seasoning with additional salt and pepper.
