Sparkling Cucumber Basil Lemonade


  • 3-inch length of cucumber, chilled and coarsely chopped (about 1/2 cup)

  • 3 fresh basil leaves (plus more for garnish)

  • 2 oz fresh squeezed lemon juice

  • 2 oz water

  • 2 oz simple syrup (or 1 oz water and 1 oz sugar)

  • 4-5 ounces sparkling soda, to top Directions

  1. To make the simple syrup, add equal parts sugar and water to a pot over low heat and stir until completely dissolved.

  2. In a blender, blend together the cucumber, basil, lemon juice, water and simple syrup until smooth. Fill two cups with ice and divide the mixture between the two. Top with sparkling water and garnish as desired.
