1 watermelon radish, washed, peeled, and shredded or sliced very thin
1/4 cup rice vinegar (or apple cider vinegar)
2 Tbsp sugar (or maple syrup)
Add vinegar and sugar into a large bowl and mix well. Add radishes and toss.
Let sit for 10 minutes in the fridge.
Add a pinch of salt before serving - and you're all set!
Store in an air tight container for up to a week in the fridge.
