Oak Leaf Salad with Cranberry Dressing


  • 2 Tbsp cranberry sauce

  • 2 Tbsp red wine vinegar

  • 2 Tbsp olive oil

  • 1/3 cup roasted pepitas

  • 1 head oak leaf lettuce, leaves washed and separated

  • 1/2 onion, sliced thinly

  • Goat cheese


  1. Combine cranberry sauce, red wine vinegar, and olive oil in screw-top jar; shake well.

  2. Combine the rest of the ingredients in medium bowl, and drizzle with dressing.

  3. Enjoy a crisp and refreshing salad!
