2 Tbsp cranberry sauce
2 Tbsp red wine vinegar
2 Tbsp olive oil
1/3 cup roasted pepitas
1 head oak leaf lettuce, leaves washed and separated
1/2 onion, sliced thinly
Combine cranberry sauce, red wine vinegar, and olive oil in screw-top jar; shake well.
Combine the rest of the ingredients in medium bowl, and drizzle with dressing.
Enjoy a crisp and refreshing salad!
