1 Tbsp olive oil
1 Tbsp butter
1 onion, sliced
8 cloves garlic, minced
1 tsp crushed red pepper
5 oz mushrooms, sliced
5 oz braising mix, chopped
1 1/2 cup whole milk
4 oz parmesan cheese
1/2 cup finely chopped walnuts
salt and pepper to taste
Heat olive oil and butter over medium heat in an oven safe pan. Add onion and cook until soft.
Add garlic and crushed red pepper and sauté for about 30 seconds.
Add mushrooms and braising mix and cook until soft, about 10 min.
Remove from heat and set aside to cool.
Preheat oven to 425 degrees.
Meanwhile, whisk eggs in a mixing bowl and add in the milk as well as some salt and pepper. Whisk until blended.
Pour egg mixture on top of mushrooms and greens and mix in 2 oz parmesan cheese.
Sprinkle 2 oz parmesan cheese and walnuts on top.
Bake the quiche for about 30 minutes, or until cooked through.
