Mushroom and Greens Frittatakevin6626Apr 4, 20221 min readUpdated: Jun 7, 2022Ingredients1 Tbsp olive oil1 Tbsp butter1 onion, sliced8 cloves garlic, minced1 tsp crushed red pepper5 oz mushrooms, sliced5 oz braising mix, chopped6 eggs1 1/2 cup whole milk4 oz parmesan cheese1/2 cup finely chopped walnutssalt and pepper to taste DirectionsHeat olive oil and butter over medium heat in an oven safe pan. Add onion and cook until soft.Add garlic and crushed red pepper and sauté for about 30 seconds. Add mushrooms and braising mix and cook until soft, about 10 min. Remove from heat and set aside to cool. Preheat oven to 425 degrees. Meanwhile, whisk eggs in a mixing bowl and add in the milk as well as some salt and pepper. Whisk until blended.Pour egg mixture on top of mushrooms and greens and mix in 2 oz parmesan cheese.
