Mizuna Pesto Pasta

If you do not have sunflower seeds you can substitute with walnuts and/or pine nuts. Add any protein of your choice to this delicious dish.


Ingredients

  • 2 cups Mizuna leaves

  • 1 large garlic clove

  • ¼ cup sunflower seeds

  • ½ cup parmesan cheese

  • ½ cup olive oil

  • 1 box penne pasta

  • salt & pepper to taste

  • ½ cup parmesan cheese as topping



Instructions

  1. Toss the sunflower seeds in a dry sautéing pan until fragrant, about 2 minutes. Let it cool.

  2. In a food processor and/or blender add Mizuna, garlic, sunflower seeds, and parmesan cheese.

  3. Pulse few times to mix all ingredients. Then on low mode, start adding the olive oil in a thin steady stream until a paste is form, about 1 minute. Add salt and pepper to taste.

  4. Cook the pasta according to package.

  5. Drain pasta and combine with warm Mizuna pesto.

  6. Top with more parmesan cheese and enjoy!
