If you do not have sunflower seeds you can substitute with walnuts and/or pine nuts. Add any protein of your choice to this delicious dish.
2 cups Mizuna leaves
1 large garlic clove
¼ cup sunflower seeds
½ cup parmesan cheese
½ cup olive oil
1 box penne pasta
salt & pepper to taste
½ cup parmesan cheese as topping
Toss the sunflower seeds in a dry sautéing pan until fragrant, about 2 minutes. Let it cool.
In a food processor and/or blender add Mizuna, garlic, sunflower seeds, and parmesan cheese.
Pulse few times to mix all ingredients. Then on low mode, start adding the olive oil in a thin steady stream until a paste is form, about 1 minute. Add salt and pepper to taste.
Cook the pasta according to package.
Drain pasta and combine with warm Mizuna pesto.
Top with more parmesan cheese and enjoy!
