Preheat oven to 400 degrees F.
Slice eggplant into thin disks and place them on a lined baking sheet.
Use a pastry brush to lightly coat the slices with olive oil. Be sure to flip and brush both sides.
Sprinkle salt on each disc, to taste.
Bake in the oven for 15 minutes.
Serve warm or store them in an airtight container to snack on later. (These are great dipped in marinara sauce!)
