Ingredients
2 bell peppers (or .5 lb Shishito Peppers .. or a mixture of both types of peppers!)
1 Tbsp oil
1 tsp rice vinegar
1/2 tsp toasted sesame oil
Cayenne Pepper or Chili Flakes
Sea salt
Directions
Core and seed the bell peppers, and remove the ribs. Slice the peppers lengthwise into 1-inch wide strips (mimicking the shape of a shishito pepper.)
Heat a wok or large skillet over high heat. Add the oil, and swirl it around until the pan is evenly coated. Add the peppers and a generous sprinkling of salt and cook, tossing occasionally, for 2 to 3 minutes, until the skin of the peppers is blistered and the flesh is just soft.
Stir in the rice vinegar and sesame oil, and cook for another 30 seconds.
Remove the pan from the heat, add cayenne pepper or chili flakes to taste, and sprinkle liberally with sea salt.
