This summer squash sauté is great as a side dish and can pair great with any meal. It can be a side to a pasta dish, paired with some salmon, or even just added to some rice with seasoned tofu!
Ingredients
1 1/2 tablespoons olive oil
2 large summer squash chopped
3 cloves garlic chopped
1 cup cherry tomatoes
Kosher salt to taste
Dash crushed red pepper
2 tablespoons shredded Parmesan cheese optional
Fresh basil to garnish optional
Drizzle of balsamic vinaigrette optional
Instructions
Heat olive oil in large skillet on medium-high heat. Add summer squash and cook for 5-7 minutes, stirring occasionally.
Add in the garlic and tomatoes and cook for 2 to 3 minutes, gently stirring, or until vegetables are crisp-tender and tomatoes are about ready to burst.
Season with salt and crushed red pepper. Sprinkle with Parmesan cheese, if using, and drizzle with vinaigrette, if using. Serve immediately.
