Tasty Summer Squash Sauté

This summer squash sauté is great as a side dish and can pair great with any meal. It can be a side to a pasta dish, paired with some salmon, or even just added to some rice with seasoned tofu!

Ingredients

  • 1 1/2 tablespoons olive oil

  • 2 large summer squash chopped

  • 3 cloves garlic chopped

  • 1 cup cherry tomatoes

  • Kosher salt to taste

  • Dash crushed red pepper

  • 2 tablespoons shredded Parmesan cheese optional

  • Fresh basil to garnish optional

  • Drizzle of balsamic vinaigrette optional

Instructions

  • Heat olive oil in large skillet on medium-high heat. Add summer squash and cook for 5-7 minutes, stirring occasionally.

  • Add in the garlic and tomatoes and cook for 2 to 3 minutes, gently stirring, or until vegetables are crisp-tender and tomatoes are about ready to burst.

  • Season with salt and crushed red pepper. Sprinkle with Parmesan cheese, if using, and drizzle with vinaigrette, if using. Serve immediately.
